Aceasta reteta poate ca ar fi fost potrivit sa o postez sambata trecuta. Din pacate nu am reusit sa o termin la timp pentru a fi postata inainte sa va terminati cumparaturile sau mancarurile pentru Paste.
Cum blogul nu are inca un an, cred ca ati observat ca preparatele pentru Paste lipsesc. De aceea, pentru anul viitor vreau sa gasiti deja aceste retete in timp util.
Eu am facut drobul din organe de porc. Anul acesta am cumparat decat carne de miel, fara organe.

Ingrediente:

- 1 kg rinichi
- 1.5 kg ficat
- 300 ml apa fierbinte
- 2 legaturi de ceapa verde (10 bucati)
- 2 legaturi de usturoi (8 bucati)
- 1 legatura de tarhon (2-3 fire)
- patrunjel verde
- piper macinat
- sare
- cimbru uscat
- 3 oua
- 100 unt (optional)
- 8 oua fierte (optional)


Maybe this recipe should have been posted last Saturday. Unfortunately I didn't finished it in time to be posted before you finished your shopping  or your dishes  for Easter.
My blog doesn't have a year yet, so you probably noticed that special recipes for Easter are missing. That's why for next year I want you to find these recipes before Easter. 
I cooked drob (a dish similar to haggis) but I used pork organs. This year I bought lamb meat, but not organs.


Ingredients:


- 1 kg kidneys
- 1.5 kg liver
- 300 ml boiled water
- 2 bunches of green onions (10 pieces)
- 2 bunches of green garlic (8 pieces)
- 1 bunch of tarragon  (2-3 branches)
- green parsley 
- grounded pepper
- salt
- dried savory
- 3 eggs
- 100 butter (optional)
- 8 boiled eggs (optional)


Organele se spala bine cu multa apa. Rinichii se lasa in apa cu 3-4 picaturi de otet timp de 15 minute.
Apoi le-am pus intr-o oala si am adaugat apa si sare. Am pus oala cu organe sa fiarba la foc mic. A durat aproximativ 2 ore.

The organs will be washed very well with plenty of water. Kidneys will be left in water with 3-4 drops of vinegar for 15 minutes. After that I put the organs into a pot I added water and salt. The pot was put on the stove and the organs were left to boil. I had to wait about 2 hours until they boiled. 



Organele se taie in bucatele potrivite. Acestea se dau fie prin masina de tocat, fie se adauga putin apa fierbinte si se toaca marunt cu blenderul.

The organs will be cut in medium pieces. These pieces will be grounded with the meat grinder, or you can add some boiled water and ground them with the blender. 


Apoi am spalat verdeturile si le-am taiat marunt. Si cu un elan teribil am amestecat toate condimentele si verdeturile cu organele tocate, cele trei oua si un pic de apa calda(daca nu ati pus-o deja cand le-ati tocat). Mai puteti adauga untul de care am scris la ingrediente; asta daca vreti sa fie ceva mai gras.


After that I washed and finely cut the  greenery. And with a terrible upsurge I mixed all the condiments and greenery with grounded organs, the three eggs and some hot water (if you didn't add it when you grounded them). You can add also the butter that was mentioned at ingredients; if you want to be fatty. 


Am pus compozitie in tavi de chec si am adaugat ouale fierte. Apoi am acoperit ouale cu un alt strat de compozitie. Tavile le-am bagat in cuptorul preincalzit si le-am lasat la temperatura medie pret de un film bun (adica vreo ora si jumatate). Drobul e gata atunci cand devine tare si are o crusta maronie (compozitia initiala e destul de moale).

I put composition in cake trays and I added the boiled eggs. I covered the eggs with another layer of composition. I put the trays in the preheated oven and I left them there at medium temperature for a good movie (one hour and half). Drob is ready when it gets firm and it has a brown crust (initial composition it's quite softly).


Mie imi place sa-l servesc rece, ca aperitiv, cu salata si dressing de iaurt si condimente.
I like to serve it cold, as appetizer, with salad and yogurt and condiments dressing.

Ciorba de urzici / Nettles soup

Iata ca minivacanta s-a terminat. Sper ca ati petrecut bine si ca sunteti bine, sanatosi si voiosi!
Noi am avut niste zile minunate. Am vizitat familia, prietenii si ne-am bucurat de soare.
Probabil ca v-ati asteptat ca retetele de saptamana aceasta sa fie cele pregatite de Paste. Vor veni si ele. M-am gandit insa ca ar fi bine sa pun si reteta de ciorba de urzici pentru ca inca mai puteti sa le gatiti. Mai tarziu vor fi mult prea batrane pentru asta.

Iata de ce avem nevoie:

- 1 kg urzici
- 4 linguri de ulei
- 1 ceapa mare
- 2 morcovi
- 3 oua
- 500 ml lapte batut
- 3 catei de usturoi
- sare

So, the mini holiday just ended. I hope you spent good your holidays and that you're ok, healthy and happy! 
We had a great days. We visited our family, our friends and we took a sunbath. 
Maybe you're expecting to see this week the recipes that were cooked for Easter. They will come soon. I thought that it will be better to post my recipe of nettles soup while you still can cook them. Later they will be too old to be cooked.


Here are the ingredients:


- 1 kg nettles
- 4 tablespoons of sunflower oil
- 1 big onion
- 2 carrots
- 3 eggs
- 500 ml butter milk
- 3 cloves of garlic
- salt



Am curatat si am spalat urzicile. Intr-o oala am pus 4-5 l de apa si am pus-o pe foc. Am lasat-o pana cand aapa a dat in clocot. Apoi am pus urzicile si le-am oparit 5 minute.  Le-am scos si le-am pus intr-un bol.
Daca va plac taiate fin, acum este momentul sa le taiati. Eu le-am lasat asa cum erau.

I sorted the nettles and I washed them. In a pot I put 4-5 liters of water and I put it on the stove. I left it there until the water started to boil. After that I put the nettles and I scalded them for 5 minutes. I took them out of the pot, in a bowl.
If you like the nettles to be finely cut, now it's the moment to cut them. I left them as they were.



Curatam, spalam si taiem ceapa si morcovii. Daca va este mai usor puteti sa le dati pe razatoare.
We peel off, wash and cut the onion and the carrots. If it's easier for you, just grate them. 


Am calit ceapa si morcovii 3-4 minute intr-o oala in care am pus uleiul.

I tempered the onion and carrots for 3-4 minutes in a pot in which I added the sunflower oil.


Am pus si urzicile si le-am mai calit inca 5 minute impreuna. Apoi am adaugat apa si sarea. Puteti pune cata apa vreti. Eu nu am pus multa apa. Imi place sa am multe zarzavaturi in farfurie.

I put the nettles and I tempered them with the other vegetables for 5 minutes. After that I added water and salt. You can add as much water as you want. I didn't add too much water because I like to have many vegetables in my bowl.


Cand urzicile si legumele s-au fiert, am zdrobit usturoiul si l-am pus in ciorba. Am lasat 10 minute sa fiarba cu urzicile si apoi luam oala de pe foc.

When the nettles and vegetables were boiled, I smashed garlic cloves and I put them the soup. I left the soup to boil for other 10 minutes so the garlic could be boiled with the nettles and after that I took the pot aside.


Am amestecat ouale cu laptele batut si am turnat in oala cu ciorba de urzici amestecand usor. Si ca sa nu va intrebati daca oala trebuie sa fie pusa pe foc mentionez ca nu am pus-o inapoi.

I mixed the eggs with the butter milk and I put the composition in the nettles soup pot and I mixed a little bit with a spoon. In case you are wondering if I put the pot back on the stove, I must mention that I didn't. 


 Daca vreti puteti adauga atunci cand serviti niste patrunjel.
Tare buna a mai iesit ciorba asta!


If you want you can add some parsley when you serve this soup.

Pulpe de pui cu sos teriyaki si garnitura de ciuperci / Chicken drumsticks with teriyaki sauce and mushrooms side dish

Iata ca incet-incet ne apropiem de Paste.
Desi mi-as dori sa pot tine post in aceasta perioada, trebuie sa recunosc faptul ca imi este destul de greu. Programul extrem de aglomerat in ultima saptamana mi-a dat cu totul peste cap planurile! Nu am sa va povestesc despre serviciu - am sa spun decat ca sunt pe cale de a realiza cel mai important lucru al carierei mele de pana acum. Imi doresc din tot sufletul ca lucrurile sa mearga bine motiv pentru care mi-am propus sa sacrific atata timp cat e necesar.
Nu voi uita de blog si nici e cei ce il citesc! Am sa aduc retete noi sau pur si simplu reinventate.
Azi am sa va povestesc despre o reteta care noua ne-a placut mult. Puiul a fost de la mama. A avut un gust minunat!

Ingrediente:

- 2 pulpe de pui
- 300 ml vin alb
- sare
- piper
- 3 linguri sos teriyaki
- condimente (scortisoara, nucsoara, curry, boia)
- 400 g ciuperci Champignon
- 2 morcovi
- 1 ceapa
- 2 linguri ulei de masline
- 200 ml de smantana
-50 g cascaval  (optional)

Slowly Easter is getting closer and closer.
Although I would wish to fast in this period, I have to admit that it's quite difficult to do that. 
My extremely busy  schedule from last week messed up all my plans! I won't tell you about my job - I will tell you only that I'm about to do the most important thing for my career until this moment. I wish all the things to be well made so I will sacrifice as much time as is needed.
I won't forget about the blog and it's readers! I will bring new or reinvented recipes.
Today I will tell you about a recipe that we liked very much. The chicken was raised by my mum. This chicken had a great taste!

Ingredients:


- 2 chicken drumsticks
- 300 ml white wine
- salt
- pepper
- 3 tablespoons of teriyaki sauce
- condiments (cinnamon, nutmeg, curry, paprika)
- 400 g Champignon mushrooms
- 2 carrots
- 1 onion
- 2 tablespoons of olive oil
- 200 ml fresh cream
- 50 g pressed cheese (optional)



Am pus pulpele intr-un vas termorezistent. Am adaugat condimentele, sosul teriyaki, vinul si apa cat pulpele sa fie acoperite. Vasul acoperit l-am pus in cuptorul preincalzit. Cu 5 minute inainte de a scoate vasul din cuptor lasati-l putin descoperit. Pulpele suculente se vor rumeni frumos la suprafata.

 I put the drumsticks into a thermo resistant pot. I added the condiments, teriyaki sauce, wine and water, just to cover the drumsticks. The covered pot was put in the preheated oven. With five minutes before I had to take out the pot, we have to leave it uncovered. This way we'll have juicy and nice parched drumsticks.


Apoi am preparat ciupercutele. Le-am curatat si le-am oparit.
Intr-o tigaie in care am adaugat uleiul de masline am pus ceapa taiata marunt si morcovii razuiti. Le-am calit impreuna 3-4 minute.

After that I prepared the mushrooms. I peeled them and scalded for few minutes. 
In a pan in which I added the olive oil I put finely cut onion and grated carrots. I tempered them for 3-4 minutes.



Am pus ciupercile si condimente de care am adaugat si la pui. Se amesteca ingredientele si se lasa sa se inabuse in suc propriu timp de 5-6 minute.

I added the mushrooms and condiments that we used also for the chicken drumsticks. We mix slowly with a spatula and we leave the ingredients to boil in it's own juice for 5-6 minutes. 


Am adaugat smantana si am mai lasat tigaia 2-3 minute pe foc, amestecand incet. Am pus apoi ciupercile in farfurii si am razuit putin cascaval (numai daca doriti). Am asezat si pulpele ce intre timp au devenit caldute, adica numai bune de mancat!

I added fresh cream and I left the pan on the oven for 2-3 minutes, mixing slowly with a spatula. I put the mushrooms on the plates and I grated some pressed cheese (only if you want). I also put the drumsticks on the plates, which were warm, just good to be eaten!





Totul a fost delicios. Sosul teriyaki a dat carnii un gust foarte bun, pastrand-o in acelasi timp si frageda.
Am sa mai incerc acest sos si in alte combinatii.

Everything was delicious. Teriyaki sauce gave a very good taste to the meat and it kept it also very juicy. I will try this sauce also in other combinations.

Cornuri cu nuci caramelizate / Buns with caramelized walnuts

Zilele acestea am lipsit cam mult. Si eu si sotul ne-am sarbatorit zilele de nastere, fiind nascuti pe 7 (el) si pe 9 (eu).
Din pacate nici saptamana care vine nu am sa fiu prea mult prezenta. Din mai multe cauze. Sunt si destul de ocupata in aceasta perioada dar am si o problema tehnica. Laptopul meu nu mai poate fi alimentat; se pare ca este o problema la cablul de alimentare. Si cum sotul meu lucreaza si acasa va fi destul de greu sa am acces la calculator. Asa ca voi gati, voi face fotografii si astept sa rezolv problema despre care va spuneam.

Dar sa trecem la treaba! Am facut niste cornulete cu nuci caramelizate absolut minunate!

Iata de ce ingrediente avem nevoie:

- 6 oua
- 6 linguri de zahar
- vanilie
- 14 g drojdie uscata
- 100 ml smantana dulce
- 600 ml lapte
- 1200 g faina (si inca 200 g pentru presarat pe masa)
- 400 g nuci
- 7 linguri de zahar

These days I missed a lot. Me and my husband celebrated our birthdays, being born on 7th of April (him) and on 9th of April (me). 
Unfortunately also this week I'll miss a lot. There are few causes. I'm quite busy in this period of the year but I have also a technical problem. My laptop can't be charged; it seems that it has a problem with charger's wire. And considering that my husband works also at home it will be quite difficult to have access at the other computer. So I'll be cooking, I'll take photos and I'll wait until my problem with the charger will be solved. 


But in off talking-let's get back to work!I baked some wonderful buns with caramelized walnuts!


Here are the ingredients:


- 6 eggs
- 6 tablespoons of sugar
- vanilla
- 14 g dried yeast
- 100 ml sweet cream
- 600 ml milk
- 1200 g flour (and 200 g in addition for spreading on the table)
- 400 g walnuts
- 7 tablespoons of sugar





Amestecam cele sase oua cu sase linguri de zahar, laptele caldut si smantana. Apoi vom adauga vanilia, drojdia si jumatate din cantitatea de faina. Se amesteca bine, se pune un prosop peste vas si se lasa la dospit pana cand coca isi va dubla volumul.
Cand coca a dospit adaugam restul de faina si amestecam. Coca se lasa sa se odihneasca timp de 15 minute.

We mix the eggs with the 6 tablespoons of sugar, warm milk and sweet cream. After that I put vanilla, yeast and half of the quantity of flour. We knead well, we put a fabric napkin on the recipient and we let the dough to yeast until it doubles its volume. 
When the dough yeasted we'll add the rest of the flour and we knead. The dough will be left to rest for 15 minutes.


Intre timp am caramelizat zaharul si am pus nucile. Dupa ce le-am amestecat le-am pus pe o farfurie intinsa uda. Cand zaharul caramelizat s-a racit am desfacut nucile.

Meanwhile I caramelized the sugar and I put the walnuts. After I mixed the sugar with the walnuts I put them on a wet plate. When the caramel cooled off I separated the walnuts. 



Am presarat faina pe masa si am intins o parte din coca pe care am taiat-o in triunghiuri de aproximativ aceeasi dimensiune. Am pus cateva nuci pe fiecare triunghi si le-am rulat de la baza spre varf. Apoi le-am asezat in tava in care am pus hartie de copt.
Cuptorul trebuie sa fie preincalzit. Se baga tava si se fixeaza la temperatura medie. Cornurile se vor unge cu un sirop facut din 2-3 linguri de zahar, vanilie si apa. Astfel cornurile noastre se rumenesc frumos capatand o culoare aurie.

I spread flour on the table and I stretched a part of the dough on it. The dough was cut in triangles with almost  the same size. I put some caramelized walnuts on each triangle and I rolled it from the base to its height. I put each of them on the tray (in which previous I put baking paper).
The oven must be preheated. The tray will be put in the oven and the temperature will be set to be medium. 
With a brush I put some syrup on each bun. The syrup was made of 2-3 tablespoon of sugar, vanilla and some water. This way our buns will have a nice honey colour when they will be baked. 




Serviti cornurile cu lapte caldut sau o cafea la micul dejun. Sunt delicioase!

Serve the buns with warm milk or coffee at breakfast. There are delicious!

Scrumbie la cuptor cu sos de patrunjel si usturoi verde / Atlantic mackerel with parsley and young garlic sauce cooked in oven

Mi-ar placea sa locuiesc undeva langa mare. Imi place mirosul sarat, ador marea si tot ceea ce tine de ea. Nu neg faptul ca si mancarurile cu peste imi plac foarte mult.
Gatesc peste destul de des insa nu chiar atat de des cat as vrea. Prefer pestele gatit la cuptor, cu sos sau simplu, cu lamaie.
De data asta am pregatit scrumbie. Reteta o am de la Adita, matusa sotului meu, o persoana deosebita. Dar sa va spun de ce ingrediente avem nevoie:

- 4 pesti
- 2 linguri de ulei de masline
- patrunjel verde
- 4-5 fire de usturoi verde
- sare
- piper

I would like to live somewhere near the sea. I like the salty smell, I love the sea and all that it's related to it. I don't deny the fact that I like so much fish dishes.
I cook quite often fish but not so often as I would wish. I prefer the fish cooked in the oven, with sauce or simple, with lemon. 
This time I cooked Atlantic mackerel. This recipe is from Adita, my husband's aunt, a wonderful person. But let me tell what ingredients we need to cook this dish:
- 4 fishes
- 2 tablespoons of olive oil
- fresh parsley
- 4-5 pieces of green garlic (young garlic)
- salt
- pepper


 Am spalat si am curatat pestii. Apoi i-am asezat intr-un vas termorezistent.
Apoi am adaugat apa cat sa-i acopere, am pus uleiul, sarea, piperul. Vasul l-am pus in cuptorul preincalzit pe care la-m fixat o temperatura medie. Pestele va fi gata destul de repede, asa ca fiti atenti.

I washed and cleaned the fishes.After that I put them into a thermo resistant recipient. 
I added some water just to cover the fishes, I put the oil, salt and pepper. The recipient was put in the preheated oven which was fixed at a medium temperature. The fish will be cooked quite fast, so watch it closely. 


Cand pestele a fost gata am spalat si am tocat patrunjelul si usturoiul. Le-am pus peste pestele din vas si am amestecat cu sosul format. Apoi am pus vasul in cuptor pentru inca 10 minute.

When the fish was ready  I washed and cut finely the parsley and the garlic. I put them over the fish and I mixed slowly with the sauce that was left in the recipient. After that I put the recipient back in the oven for 10 minutes more.






Pestele se serveste alaturi de cartofi natur si sos delicios de patrunjel si usturoi. Scrumbia are un gust foarte bun in combinatie cu verdeata.

Fish will be served with boiled potatoes and the delicious sauce of parsley and garlic. Atlantic mackerel has a great taste in combination with this green stuff.










Sper sa incercati reteta aceasta minunata. Sunt sigura ca va placea multora dintre voi!
